Convection(electric/ gas/ combined) - suitable for baking and pastry biscuit tin goods in stock. Easy to manage. Can be additionally equipped with a stand or a fermentation chamber.
Oven(electric/ heated steam tubes/ modular) - feature of this type of ovens for baking bread and pastry is the special structure of the working chambers - pods. In hearth furnaces, in contrast to convection, apply heating elements top and bottom of each camera and not the fans, so in the baking process completely eliminates vibration preventing the preparation of "sensitive" products (biscuits, meringues, soufflés).
