Ammonium salt (ammonium carbonate, ammonium bicarbonate)food is a crystalline white substance of the following composition: ammonium bicarbonate (in terms of dry substance) of at least 99%, ammonium carbonate (calculated on the dry matter) - not more than 1%, of water - less than 3%.
Used in the food industry in the production of flour confectionery products as a chemical raising agent (E503) instead of ammonium carbonate food.
