Therefore, the use of adipic acid for the production of jellies, jams, and gelatine desserts helps to reduce the consumption of gelatin and other protein ingredients.

Adipic acid is used as a mild acidifier with a low hygroscopicity and sour taste long-lasting, such as in chewing gum up to 3%; in desserts to 0.6%; in baking mixes to 0.4%; dry mixes for beverages up to 1% (in terms of ready-to-eat product).
