1. The heat treatment preserves the color of the product.(the meat stays red and does not become grey)
2. Prevents sticks Clostridium botulinum.
3. Makes the product taste of vaccinati what does the salt not interchangeable when cooking any meat product.

The method of application.

It can be used as in dry salting and wet. Personally, I do the wet method. Per 1 kg of product is 23 grams of nitrite salt and 100ml of water. All mixed and asprinbuy meat. Wrapped in foil and marinate for approximately 36 hours.
