Nisin

 

Nisin (food additive Е234) - peptide antibiotic produced by the microorganism Streptococcus lactis. With the 50-ies of the 20th century began the industrial production of nisin, and a little later, nisin has been used in the food industry as preservative marked Е234.

Nisin (food additive Е234) produced by fermentation using bacteria producer Lactococcus Lactis. The starting material for the cultivation of bacteria are natural substrates, such as milk or dextrose.

In chemical the structure of nisin like peptide antibiotics, as subtilin, cindamycin and dynamitin. Polypeptide chain nisin consists of 29 amino acid residues, some of them are never found in proteins. Chemical formula nisin (preservative Е234): C143H230N42O37S7. Supplement Е234 soluble in water, which expands the range of its application.

Nisin as a food additive, preservative Е234 has the ability to inhibit gram-positive bacteria (staphylococci, streptococci, etc.), a spore-forming and some acid-fast bacteria. Supplement Е234 has high reaction the ability of residues of unsaturated amino acids, which interacts with SH groups enzymes. As a result, nisin, and has such antimicrobial activity.

Like other antibiotics, nisin can kill not only harmful but also beneficial bacteria, host participation in the life of the human body. It is therefore not recommended to use a large number of products with a preservative Е234.

Also Supplement has Е234 preservative properties, for example, can inhibit the excessive growth of all the bacterial spores that cause spoilage, which are subject to thermal treatment. The use of nisin helps to reduce time or temperature thermal effects, allowing you to keep the nutrients in foods. For example, when using supplements Е234, loss of vitamin C (additive E300) reduced by 30-35%, and the useful beta-carotene (a food additive E160a) is saved.

Dietary Supplement Е234 actively used in cheese-making, canning of meat and dairy products, green peas, beans, mushrooms, in the production of oil, condensed milk, confectionery.

Other applications of nisin:

· is added in the process of maturing wines;

· in medicine as an antibiotic;

· when transporting dairy products;

· in the production of casings for sausages and cheese.

Supplement is Е234 approved for use in the food industry in Ukraine and many other countries.
