Potassium phosphate (pyrophosphate)
Potassium phosphate pyro — potassium salt of pyrophosphoric acid, which looks like white powder. Highly soluble in water, hygroscopic. Not soluble in ethyl alcohol. Get it by acting acid on potassium carbonate.
Potassium pyro phosphate (potassium
pyrophosphate) is widely used in various fields, for example:
• as an electrolyte in copper plating electroplating production
• in the food industry
• in the production of detergents and toothpastes etc.
In the food industry Potassium
pyrophosphate is used as a stabilizer, moisture retention agent, the regulator
acidity, emulsifying salt, dye fixing, synergist of antioxidants.
Potassium pyro phosphate is used in the production of meat and fish
stuffing products. Add potassium pyrophosphates alone or jointly with
other phosphates. Phosphates contribute to the swelling of the muscle proteins
the water retention during cooking, to increase juiciness and yield of minced meat products. They
provides resistance fat emulsions, inhibit oxidation processes in
fat. With the introduction of the phosphate structure of the meat is improved.
Pyrophosphates are also used in the manufacture of processed cheese as
salt-melters. Often used together with other phosphates and citrates.
