Used in the food industry in as synthetic antioxidant and acidity regulator (E331), as well as as the complexing agent, dispersing agent, buffer (pH) and taste substance, emulsifier, salt-melter.

He is a white crystalline powder, easily soluble in water, slightly soluble in alcohol.
