Sodium benzoate

Benzoate C6H5COONa sodium (E211) — a dietary Supplement refers to a group of preservatives.

Benzoate sodium — the sodium salt of benzoic acid. White powder, odorless or a slight odor of benzaldehyde.

Having strong dampening effect on yeast and fungi, including aflatoxines inhibits in cells the activity of enzymes responsible for redox reactions, and enzymes that break down fats and starch.

In natural products it is found in small doses in apples, raisins and cranberries, cinnamon, cloves and mustard.

Application

Food Supplement

Used for canning meat and fish products, margarine, mayonnaise, ketchup, fruit products, soft drinks. When used in products containing vitamin C, the formation of carcinogenic benzene in concentrations exceeding the maximum allowable.

Benzoate sodium - known and widely used preservative that provides protection products from of yeast and fungi and some bacteria. As a consequence, significantly increases the shelf life of products. At recommended doses do not any impact on the taste of the product.

Benzoate sodium has a strong inhibitory effect on yeasts and fungi, including aflatoxines, suppresses in microbial cells activity enzymes responsible for redox reactions, as well as enzymes that break down fats and starch.

Benzoate sodium is used in food industry. E211 is completely dissolved in water and does not lose its properties when boiling; therefore, the range of its application in the food industry has virtually no boundaries. Sodium benzoate use in the manufacture of soft drinks, sausages, meat products and cheese, canned and preserved foods, sauces, spices and seasonings, pickled vegetables and canned fruit, jams, jellies, fish canned and salted fish, candy and other confectionery products, almost all products, especially – prepared salads. Also E211 sodium Benzoate present in some products for weight loss and infant nutrition.

Medicine and cosmetics

As the preservative used in the cosmetic and pharmaceutical industries. Used in medicine as an expectorant, usually in the combined drugs.

Technique

Also used in aviation as a major component of inhibited paper grade A (protection of parts made of aluminum and galvanic coatings).

Used in pyrotechnics to create the squeal of the rocket taking off.
