Potassium sorbate (E202)

Potassium sorbate E202 (potassium salt sorbic acid)– artificial food additive used in food industry as preservative.
Substance in the form of sorbic acid contains in the juice of mountain ash.
202 e is a powder or granules white. The potassium sorbate characteristic of a bitter taste in the absence of smell.
Dietary Supplement is made using interactions of sorbic acid and potassium hydroxide.

E202 approved for use as a preservative for food production nutrition in most countries of the world.
Potassium sorbate retards the growth of microorganisms – fungi, yeasts, some species of bacteria. The substance is used in the composition of hygienic products as it has microbicidal properties, only slowing down the development of germs.
E202 is more soluble in water than sorbic acid, so is used for food production with a large moisture content.
