Food additive E575 (chemical Glucono-Delta-lactone (GDL)) is a white or off-white fine crystalline powder. Glucono-Delta-lactone hygroscopic, has no taste or smell, soluble in water. Chemical substances formula: C6H10O6.

Glucono-Delta-lactone is the inner ester of gluconic acid. When connecting to a GDL water undergoes slow hydrolysis to gluconic turning back acid. In the process of this reaction is the fall in acidity (Ph) of the environment response.

Thanks this property is the use of food additives E575 makes it possible:

deposition of protein (education and curing of the mixture after the spill);
