Technical details

Knives are mainly used for the preparation of the emulsion from the skin, and also for stuffing fresh meat for sausages and grinding.
The angles of cut
The angle ß = 20º, which is used specifically for the production of emulsions.
The angle β = 25º - used for the production of smoked sausages, cooked sausages.
The above treated products should not be colder than -10ºC.
The angle ß = 27-29º - used to cut products of up to -20ºC.
The angle ß 29º - used for cutting frozen products up to -30ºC.
